We had a few bottles of our home made cider blow their tops in our "wine cellar" (little room in corner of our basement) and with a new baby on the way and subsequently arriving, we did not deal expeditiously with the mess. Consequently, there is a good deal of mold growing in there now. We are cleaning it up now with vinegar and then bleach. But I am wondering about a few gallons of ACV I have going in there. They are covered only with cheesecloth and a rubber band. Should I worry about mold contamination? They look and smell fine at this point. Also, any concerns about taking the half empty bottles that overflowed but are still loosely capped (we were a bit over-enthusiastic with adding honey when we bottled this year, and a bit under-attentive with our wire wrapping technique) and adding them to a mother for more ACV?
