S/O on Cheap, delicious meals

Autumn is upon us, and I'm trying to get back into our Sunday Night Roast Chicken thing ( you know, roast chicken one night, chicken casserole type thing one night, chicken soup/stock one night). I am SO bored with my "leftover" chicken recipes, though. I generally will save back a couple of cups of meat for chicken pot pie or chicken enchiladas. Sometimes I'll make chicken salad for sandwiches. But what else do YOU do with your shredded chicken meat?

bbq chicken sandwiches
chicken wraps - with lots of veggies and bacon
quesadillas
chicken casserole - this is usually just thrown together with rice, cheese and whatever veggies are around
chicken on top of a salad
tossed with some pasta and sauce

We do tacos, quesadillas, chicken Caesar salad. BBQ chicken pizza is an easy favorite-- just mix the chicken with your favorite BBQ sauce, onions are optional and cover with cheese.

White chicken chili, with canned green chiles, chicken broth, cumin, lemon pepper, frozen white shoepeg corn, and white beans. Top with sour cream, shredded Monterey Jack cheese, and chopped cilantro. Eat with tortilla chips and steamed broccoli.
