Dinner thread

I've been really slacking in the dinner-making department lately. I love to cook and bake, but this transition back into the school year knocked me off my routine and we were having stuff like pancakes, eggs and toast, mac and cheese, etc. way too often. So tonight I made a beautiful Italian wedding soup with homemade meatballs and a lemon cake spiced with cardamom -- I can't wait for dinner!!!

What are you having for dinner tonight, or what did you make recently that your family loved?

Beef stroganoff (I love thsi one b/c it freezes great)
chicken tacos (I cook the chicken in the crockpot and shred it right before we eat)

Homemade pizza (well we bought the pizza dough already made). So fun for the kids.

I do this too! I love how the meat gets, nice and taqueria-ish. If you add green salsa to the chicken it's really good too!

tortilla soup made in the crock pot. It came it really well!

Last night we had slow cooker pulled pork with corn bread casserole and green beans.

Tonight we're having cheddar potato soup with tomato salad and fresh whole wheat bread. I can't wait!

Tonight we are having quiche.

What do y'all do with your chicken in the crockpot to make tacos? What chicken parts do you use?

I use chicken breasts but you can also use thighs. Just put it on low setting and throw in what you like such as chopped onion (really fine or it will be crunchy!), a little salsa, green chilis, a bit of olive oil, maybe some chili powder, cumin, oregano. You can even use a little taco seasoning if you like that kind of flavor. I like to use shredded cabbage and lime on the tacos when they are done

You all are making my tummy growl! Such good stuff! Yum.....

I made meatloaf last week using 3/4 ground beef, 1/4 loose italian sausage, both from the freezer. It was so good.

Also did beef stroganoff with ground beef, which turned out really well.
