Put it in the bank. I'm boring and conservative.

But, if I have to spend it I would:

1. Buy an awesome couch for the family room
2. Go on a great vacation
3. Have some landscaping work done
4. Have the foyer/hall/family room painted

Kitchen remodel, in a heart beat.

DH and I basically owe our mortgage and a small CC debt.
We contribute 15% to our 401Ks and the max allowed in Roth IRAs.
We have a college fund for DD. Like PP we're on track to pay off mortgage in 10 years when first kid goes to college.

My house is old and NEEDS roof repairs - tax refund will pay that. I would like new windows - plan to refi and possibly add the windows to that. The windows are the originals from the 1920s. We have storms too. Most windows don't open.

The kitchen is from the 1970s and try as a might, there's just NO WAY to work a remodel into plans. There's nothing actually wrong with the kitchen - appliances are old - and the layout is poor. But everything works. I don't see how I'll EVER get a new kitchen and it would be nice while the kids are still young and hanging around IN the kitchen. It will be less needed by the time they are out of the house. Our cars are paid off (mine is 10+ years old and his is 5) and we'll get new ones as the time comes. But I can't see how we'll ever get a new kitchen.
