What can I do with all of this delicious gravy?

I just made a wonderful pot roast (grass fed beef with bell peppers, jalapeno, tomatoes, garlic, etc.) that has a huge amount of gravy. We've eaten all the meat and I have a quart of delicious liquid - gravy actually (no flour) - do I need to toss it? What can I do with it? It isn't broth, it is gravy.

I'm not sure but I would imagine that you could freeze it in portion sizes and use it to make gravy later on. Or maybe to add flavour to another dish later?

I would cook some vegetables-- carrots, potatoes, turnips maybe-- and mix then into it, and call it a vegetable stew. We also roast potatoes in the oven, and then spoon gravy all over them. It's also yummy with buttermilk biscuits, or with a big hunk of bread to sop the gravy. The PPs idea to freeze it is a good idea, too.

Never throw away gravy! I'd make a big mess of buttermilk mashed potatoes and drench them in it.

I use leftover gravy as a base for stew or soup.

Mmmm....send it to my house. I have some leftover brown rice and pouring gravy over it would be divine.

We routinely make what MIL calls "a mess" with leftover gravy and bits of meat with added veg. It's basically a v wet hash.

You can also add in veg and water it down and have a "stewp" (or stew turned into soup). That's what we do when there are leftovers but not enough for another meal.

I use that as a base for chili colorado and enchilada sauce!
