Gulten free dairy free soy free cake ideas?

DS is turning 1 Oct 7th. I know he won't remember it, but I want to give him something treat like for a picture and all that jazz (silly I know).

He can tolerate small (like 2-3 tsp a day) dairy and soy. No wheat. The thing is all the good gluten free treats I know are dairy heavy (He got his gluten allergy from me)

Any ideas? I'm pretty good at meal planning but junk food no so much.

I'm great at junk food! I made this cake while I was off the top 8. You could go ahead and use eggs, so 2 eggs and just use 2 cups of water.

Cherrybrook Kitchen. Oooo, not sure if it's soy free. The icing is too shiny and too sweet... but the cake is good and the sweetness is good.

Try looking up some raw food desserts - all are GF/DF etc. eg. Ani Phyo's dessert recipe book, or this one looks good: http://bonzaiaphrodite.com/2009/03/r...olate-ganache/

Or, these brownies are really good: http://allrecipes.com//Recipe/black-...es/Detail.aspx I add a tsp. of baking powder, which makes them a bit more cake-like. You could add icing to make it more like a cake if you want. Or try doing a search for a black bean cake, I think there are recipes out there.

I just used sugar instead of the sugar substitutes and I make cupcakes rather than a whole cake because I usually need to bring a gfcf treat for my kids to a party. Since the recipe says it'll bake into a cake, I assume it will though.

There's a vanilla recipe that's very similar in the same blog.

Now that Earth Balance has a soy-free margarine, you can even do soy free icing -

1/4 cup Soy free EB
1/4 cup plain non-hydrogenated vegetable shortening
2-4 tbs non-dairy milk
2-3 cups icing sugar
1-2 tsp vanilla

2-3 tbs cocoa powder for a chocolate icing.
