Pumpkin Cookies?

Does anyone have a recipe for GF/DF/EF pumpkin cookies?

DS's new daycare teacher is doing pumpkins - and making pumpkin cookies - with the children. She is being super-supportive and sensitive about DS's allergies. She would like to try to sub soy flour for flour; applesauce/oil for butter; and flax-seed goo for egg. We talked about perhaps doing a flour mix of soy and buckwheat, but I haven't done a lot (any?) cookie recipes so I don't know how these subs might work.

Any other suggestions to make a successful recipe conversion/substitutions?
Do you have a recipe I might suggest that is gluten-free, dairy-free, and egg-free?

Ooh- thanks for that link. I might have to try those! I got 2 small pumpkins out of my garden this year, and I'm trying to figure out what to do with them (they're too small to make a pie I think.)
