When I make veggie lasagna, I grease the pan well, they start layering my ingredients.
- Noodles (boiled till just pliable)
- Tomato sauce (whatever kind I have handy)
- some veggies (varies dependent on availability): bell peppers (pre-fry), onions (pre-fry), tomatoes, mushrooms (button, portabella, etc,), spinach, artichoke hearts, etc
- ricotta cheese
- light sprinkle mozzarella cheese
I do about 3 or 4 layers. Then I cover it with a final layer of noodles a very small amount of sauce, and a very thick layer of mozzarella.
Some times I'll add in extras like crumbled up fried tempeh if I happen to have it available.
