Vegetarian Lasagna

Can anyone share a good recipe?

When I make veggie lasagna, I grease the pan well, they start layering my ingredients.
  • Noodles (boiled till just pliable)
  • Tomato sauce (whatever kind I have handy)
  • some veggies (varies dependent on availability): bell peppers (pre-fry), onions (pre-fry), tomatoes, mushrooms (button, portabella, etc,), spinach, artichoke hearts, etc
  • ricotta cheese
  • light sprinkle mozzarella cheese

I do about 3 or 4 layers. Then I cover it with a final layer of noodles a very small amount of sauce, and a very thick layer of mozzarella.

Some times I'll add in extras like crumbled up fried tempeh if I happen to have it available.

The Moosewood spinach lasagna has always been a hit when I've made it. It's also so rich as to serve as an excellent sedative.

When I do veggie lasagne, I mix cut up spinach and fresh basil with the ricotta mixture. Sometimes I do a layer of zuchini and summer squash.
