Hit me with your favorite crock pot recipes

Hey mama's!! I need help. I just got a 7 qt. brand new crock pot and I need to make great use of it. My DH is currently away, and I recently had a new baby, and have a toddler running around. We have been living completely off of convenience and pizza

I am hoping having the crock pot will make my life easier as the mornings are the easiest time for me. I need recipe ideas. The healthier, the better... and of course your personal favorites are always welcome! I am planning on making 4-5 crock pot meals a week and freezing the rest for leftovers.

So hit me with your best recipes, ladies!! Thanks in advance!!

Right now I have an Apple Pork Roast in mine. Sautee a 3-4 lbs pork roast on all sides, take out. Throw mushrooms and onions in the pan and sautee. Deglaze pan with 1 cup apple cider and 1/2 cup white wine, simmer till reduced by a half. Pour over roast in the crock and cook on low 6 hours. Take roast out and stir in some heavy cream, and toss a sliced apple in. Put roast back in and cook on high 30 more minutes. Serve with toasted walnuts! (this is my first time making it so I hope its good!)

Heres my favorite crock pot meal.....

Chicken Tortilla Soup
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts
shredded Cheddar cheese (optional)
sour cream (optional)
crushed tortilla chips (optional)


DIRECTIONS
Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

Easy Peasy slow cooker lamb (or beef or pork)

1/4 cup soy sauce
1Tb honey
2 Tb vinegar
2Tb seasoned rice vinegar
2 minced garlic cloves
1/2 tsp fresh ginger (grated)
1 cup broth
2lbs lamb

Put all ingredients in slow cooker, set to low.
Cook overnight or all day.
Defat the juices, thicken if desired and serve over rice or potatoes or quinoa or polenta or...

I love this Moroccan Lentil Soup

But my favorite thing to do in the crock is make chicken. I just throw in a whole fryer, biggest one that will fit, a few slices of onion, carrot, celery, a bay leaf, about a half stick of butter, and S&P, cook on low all day long. I get about 4lbs of chicken for various recipes, sandwiches, etc., and about 2 cups of high quality broth.

Refried beans without the refry:

I use a mix of pinto and black beans. Add some cheese, fresh pico de gallo and throw it on a tortilla for quick bean burritos. This recipe makes a lot, so there are leftovers for the freezer.

The Moroccon chicken stew and cassoulet recipes in this link are great. I'm a total slow cooker convert! These recipes also used dried beans, which is nice, seems crazy to use canned when you're already cooking low and slow.

I put a bone in pork roast in my slow cooker w/ a little chicken stock, garlic, salt/pepper, and then decided to add the remains of the dark amber maple syrup we had hanging around. Very moist and flavorful.

It was very good! But, I have to say that I really didn't need more than a tbs. of liquid in with the roast (in addition to the maple syrup). I would have had a less watery broth. I forget sometimes that it takes very little liquid to cook effectively in the crock pot. Also, supermarket pork lets off a lot of water in a slow cooker.

Not a recipe, but wanted to say that I finally figured out that I could make just about everything int he crock pot. So whatever you might think you have to cook on the stove or in the oven later; instead throw all the ingredients in the crock pot and go on about your day.
Soups, pulled pork, bbq chicken, whole chicken, then bones used to make broth.
Once I figured that out. life became a whole lot of crock potting!

Unfortunately I just broke mine the other day Slipped out of my hands and smashed into pieces on my floor. I was so bummed. I will have to get another one soon!

Darn! yeah, mine has a hairline crack in the bottom and it makes me mad cause I've been so careful with it. Don't know how that happened. Then the other day the cheapo handle for the temp just cracked into 3 pieces!

Yes, that is good to remember. When I make spaghetti sauce I often crack the lid for about an hour to let the sauce thicken.

I have GOT to try that pork!

oh, I forgot, I make really good lentil soup (red lentils) but I can't find the recipe. It's got a Middle Eastern slant. so good!
