I made this Carnitas-style pork yesterday and it was amazing... amazing enough to get me interested in using our slow cooker again. I probably use it 3-4 times a year.

Any more good recipes?

This is the easiest (though it is fatty) crock meal ever, and my DH can never get enough.

Salsa Verde Pork

2-3 lbs pork shoulder
1 large jar salsa verde (at least 24 oz)
1 bottle beer (optional)
If you skip the beer, a cup or 2 of water or chicken broth

Anything you like to eat with carnitas (tortillas, sour cream, cheese, tomato, avocado, beans, rice, cilantro, etc)

Add the pork, salsa, and beer(or water or broth) to crock pot and cook on high for 6 hours or low for 8-10. You can brown the meat before adding if you want. Or, you can toss in a huge hunk of frozen meat - I've done both and it's all good.

The meat is done when it shreds easily. It should be falling-apart tender. Carefully remove the pork and shred the meat - you can get rid of any remaining large bits of fat then. Serve the shredded pork with your favorite accompaniments.


ETA - I think chicken would work too. I might try a whole bird (or 2) cut into pieces.

I love this recipe too!

I have used all pinto and all black beans, but never mixed them. DH told me I could make this once a week for the rest of his life and he would be very happy. It's healthy and incredibly yummy.

1 lb Chicken thighs
1/2 cup Salsa.

Place in taco shell with cheese, lime, sour cream - whatever you want. Easiest dinner ever.

My favorite crock pot recipe is making chicken stock, LOL that is what I use for them most of the time. Although I do like roasting chicken in them when I want one for shredding for enchiladas or something. And it's great for making goulash in, although I always pre brown the meat and cook the onions ect in my dutch oven and then transfer it all to finish cooking into the crock pot.
