Elim diet, soy,dairy, gluten/wheat free?

I'll try to make a long story short....

At 3 months of age my bf baby went from being super happy and easy to a screaming crying mess . At that same time I went from eating home cooked healthy full fat foods to processed crap because I went on weight watchers.

After 4 weeks of the following symptoms I went on the elim diet

*green, mucousy poo
*inconsolable crying
*screaming in pain, even while being held
*pulling away while bf and crying every 30 seconds
*passing gas more then what I would consider normal
*weird long groaning grunting sound, uuunnnhhhhhhhhhh

She was always a spitty baby but her spit up really increased as well. I took her to the dr to rule out reflux, the dr said she had reflux and put her on omprezole. The entire 10 days she was on it she woke at night every single hour crying. I took her off and the terrible night waking went away. FTR, I do not think she has reflux. Her spit up did stop though while she was on the meds.

Anyway, went on elim diet, she started acting happier about 5 days in so I added back in homemade bread and tortillas. NO dairy or soy in these. I also accidentally had several bites of soy ice cream (I say accidentally because at the time I thought only dairy could be a problem, even though this is baby #4 I had never had these issues with the other 3). She started reacting again. Went back on full elim diet (I was only eating rice, apples, pears, potatoes and turkey). She again finally starts improving a bit when yesterday I had a long convo with a LC and pediatric nurse. She told me to go off the elim diet and I did. I should have NOT done that, today she is a mess. I feel like total crap that I listened to her and not my mama instinct.

So my questions to you wise mamas:

having been off the elim for about 24 hours, will it take 2-3 weeks for this to get out of her/my system again? Or should I see an improvement sooner since it was only a day?

Should I go back to strict elim or do you think it's safe to do no dairy/soy/gluten? I am not sure exactly what she is reacting too, although it seems to be soy and gluten/wheat.

Based on her symptoms, do you think she has reflux and/or food sensitivity?

Would you take her back to the dr to get a RAST panel or even be tested for gluten sensitivity? She is growing well, gaining weight and has no skin issues.

Any other input is very much welcomed

It won't take as long for dairy to get out of your system because its not built up.

With DS I was on a dairy, soy gluten and corn free diet. Corn was the first I could put back in around 10 months, then small amounts of soy and dairy at 11months, now at 12 I can eat as much dairy as my heart desires.

I am on gluten free because I need to be, but I couldn't cheat without a reaction.

Soy and dairy are such a similar make up (I think protein stains?) that both often need to be eliminated.

Now as solids DS can eat organic corn. Still no dairy, small amounts of soy and no gluten.

Our Ped thinks he will out grow most if not all of these allergies. I tend to agree or at least wait until the baby is over 3 before deciding this is a life long thing.

These symptoms sound like classic foremilk hindmilk imbalance and overactive letdown. No need to change any diet.

I do not have overactive let down, used to, but it stopped about 2 months ago.
I suppose I could have foremilk/hindmilk imbalance, but I doubt it. If that was the problem, then she wouldn't get better on the elim diet and then get worse when I went off it. She is clearly reacting to something I am eating
