pregnancy for diets

i am interested in what you ladies are eating as staples during your pregnancy.

this is what i am doing so far:

breakfast: 2 cage free eggs scrambled with organic milk, glass of OJ and prenatal vitamin.

been snacking on organic carrots and celery with peanut butter during the day.

lunch and dinner vary due to my work schedule, but try to include lots of grains/protein/fruits and veggies

snack before bed: sharp cheddar cheese and crackers and a tall glass of milk

so far, i have been very good to drink lots of water, milk, and OJ (the occasional lemonade or tea--i'm only human!)

i know i am not going to be able to eat this every single day for the next 9 months (except for the eggs), so i am posting this to see if i can get some ideas of healthy meals and snacks.

Breakfast ideas: soaked oats w/ maple syrup, omelets, soaked whole grain pancakes, pumpkin pancakes, sausage/eggs.

Snacks: apples w/ almond butter, cheese, fruit

Lunches: lentils, smoothie w/ hemp protein/kefir/greens

Dinners: I usually reserve meat and pasta for dinners. I usually add kale to whatever it is. I have water kefir w/ dinner. Getting back into soups, chicken and vegetable stew, beef barley soup.

Breakfast - eggs, 1 slice ww toast, skim milk

Lunch - usually leftovers from night before, today it was lasagna, salad, few grapes

Snack - fresh veggies or fruit, cheese, walnuts, peanut butter

Dinner - usually a protein and a veggie or two, sometimes brown rice

Bedtime snack - lately it's been a small bowl of bran flakes, sometimes half a peanut butter sandwich and skim milk

Drinking mostly water, though I've had very weak 50/50 black coffee the last few mornings, and occasionally pretty diluted lemonade.

nixnc, how do you not starve to death?!?!? Even pre-pregnancy, I ate 5 cage free eggs for breakfast.

We are big on smoothies around here--yogurt, milk or OJ, whatever fruit is in the freezer, protein pwd, flaxseed or wheat germ. It's an easy quick breakfast with lots of nutrition. I freeze the leftovers in popsicle molds, my kids love popsicles.

My favorite snack right now is a big spoon of peanut butter with a few chocolate chips! Not the healthiest but it sure hits the spot.

well, 2 eggs is an average. i am funny about textures, so sometimes i have to force myself to eat them and sometimes i fix 3 or 4. i am not a big breakfast person, so 2 for me is a good job.

i am also probably going to start eating some whole grain toast with it because even though i am not a big breakfast person, i find myself ravenous about 2 hours later. i think the toast will help. especially if i load it up with peanut butter or nutella.

what does "soaked" mean in reference to the oat pancakes?

A lot of people follow the recommendation to soak all grains, nuts, and seeds before using them to disable the phytates and enzyme inhibitors that are natural to all plant seeds. They can interfere with your digestion and mineral absorption.

I soak things when I am using the grains from scratch, but don't stress about it if i buy something pre-made that isn't soaked. I eat so little grains to begin with that I don't want to worry about the small amount of anti-nutrients.

I love spreading homemade hummus on whole wheat English muffins for breakfast with a piece of fruit. Kashi cereals are good - lots of iron and protein. Plain Greek yogurt mixed with fruit, some ground flax seed and a little agave nectar is also a common breakfast food.


today's lunch was an avocado, onion, tomato, and cheese sandwich on whole wheat bread. (I'm trying to use up the veggies I have this week!) Often it's leftovers from the night before.

for dinner, I love making shrimp tacos with cabbage or other veggies in soft corn tortillas. I just put a little hot and spicy Mrs Dash in the pan with the shrimp when I cook it.

My favourite snack this pregnancy has been apples and peanut butter. So good. Fills me up and is really healthy.

Also, greek yogurt with honey and I will grind up some almonds, chocolate chips and oats to mix in.

OH! Homemade hummus.

Now that it is getting colder, I have been making huge pots of chili or lentils or black beans and eating those during the week on brown rice or quinoa.

I use Sue Gregg's blender batter pancake recipe. Also, oats or oat groats are soaked overnight in milk kefir.
