clam "juice"

Thread Starter
I steamed some clams yesterday and strained and reserved the juice that was left in the pot. I am wondering about what nutrients are in this juice. Also, how do you use it??

Thanks!

You can treat it like clam "stock" and use it as a base for soup.

I make a nice fish stew with clam juice in it:

first, saute:
1/2 an onion, diced
1 or 2 cloves garlic, minced
Then add
around 12 oz raw mild fish cut in 1 inch pieces
1 cup clam juice
1 can (2 cups) diced tomatoes and juice
small splash of white wine
Add (to taste)
salt
pepper
oregano
chili powder
cayenne pepper and/or hot sauce
Simmer about 10-15 minutes
add some chopped spinach
Simmer 5 more mins, then serve.
