Pie Dough - White Whole Wheat & Mini Apple Pie recipe

A quick google search for White Whole Wheat Pie Dough led to a couple of complicated recipes. For instance, one called for orange juice, not something I typically keep on hand.

If I used a basic pie dough recipe and substituted half of the flour with White Whole Wheat flour how tough would the dough likely be?

Also, I want to make mini apple pies with this. I got the apple pie cut-out gizmo that also crimps the edges at the Christmas tree shop. I just need a the time and temp to cook them at.

I recently made pie crust using half whole wheat flour & I thought it was pretty good. When I went to make the dough I discovered I only had half as much as I needed so I used the WW. S, I think using half white WW would be just fine. My dough wasn't tough - you could tell there was WW flour in there but it wasn't tough.

I've never made mini pies, but I'd probably bake them at 350 till they're bubbly.
