Teach Me How to Make Vinegar!! (Please)

I have several pounds of ripe organic pears, and I want to make vinegar with them. Does anybody here have step by step instructions on how to do this? Or, could you point me to a website? If I can't find a recipe, I'll just have to eat them or turn them into wine (which is still awesome!) Win win either way

You might have more luck posting in the Trad'l Foods forum. I recently posted a vinegar question both here and there. One of my store-bought vinegars grew a mother so I was looking for some info on how to use it. I didn't have any luck in this forum but got a few replies in TF.

I tried googling but it was hard to find definitive, step-by-step info on the process. I did have better luck checking out the results in google images, though, for some reason. Clicking on an image there often took me to a blog about somebody making their own vinegar.

Good luck. I fear my mother had been left too long and died. (I still can't get over saying something like that. )

check out Natural Fermentation by Sandor Katz. He outlines how to make a few different vinegars. I made some ACV last summer out of some too crummy for any other purpose apples and it worked great and was sort a fun science experiement for the kids too.
