What kind of muffins do you like/make?

For a long time now, I've basicly only made (whole wheat) blueberry muffins. I'm branching out today and trying pumpkin muffins out of the king arthur bread book But, I'm basicly thinking about trying to get back in the habit of baking and having muffins for breakfast at least a couple times a week, try to get up and make pancakes or waffles or french toast at least one day a week, and just try to not feed quite so much dry cereal Hey, its a nice dream!!

SO! What kind of muffins do you like/make on a regular basis!

I use a Betty Crocker muffin recipe which has a bunch of variations. Basically take any basic muffin recipe and add any of the following combos:
-canned pumpkin, pumpkin pie spice, walnuts
-cranberries and walnuts
-chopped peaches and cinnamon
-chocolate chips and almonds
-chopped apples and cinnamon
-dried cherries and nuts
-jam and nuts
-grated carrot and carrot cake spices (i think similar to pumpkin pie spices...)

Well, the blueberry is a family favourite here, although DD and DS can't agree on the batter:

DD likes a cornbread muffin with blueberries folded in.
DS prefers buttermilk blueberry. I often use part whole wheat and part spelt flour as the basis of the batter.
DH likes lemon yoghurt with raspberry.
I prefer pumpkin.

Zucchini, banana, pumpkin or blueberry are about the only ones I make. I use the same recipe for all (it's actually a zucchini bread recipe, but its easily adaptable). Those are the only ones that ever get eaten at my house. Although I'm sure if I tried chocolate chip, they'd go over really well.

blueberry, apple cinnamon, pumpkin (in the fall and winter), surprise muffins (bake regular muffins but one fill with half the batter, add a drop of fruit puree or jam, then fill the rest of the way with muffin batter, bake as usual), corn muffins. I also make banana bread, zucchini bread, raisin quick bread, cranberry orange bread, and pumpkin bread in the fall and winter. Muffins for some reason are more eaten in the spring and summer.

mmm, thanks for all the replies and ideas! I'm quite pleased with how my pumpkin muffins turned out I cut the sugar in half (so just 3/4 of a cup per recipe), as I though it was a bit much (called for 1 cup brown and 1/2 cup white!!!), and they came out great

Apple Cinnamon Muffins are so, so good! I used replaced the 2 flours with white whole wheat flour & reduced the sugar a smidge!

Is your King Arthur book, the whole wheat baking one?? If so, I've made that recipe before and it is awesome. My favorite thing that I've done with the recipe is use pureed sweet potato instead of pumpkin and shred about 1/2 cup of carrot into them. Awesome!!

Our favorite muffins are banana nut, pumpkin/sweet potato, blueberry and oatmeal.

Homemade muffins are the best! Nothing beats the taste and nutrition!

Yeah it is I love it!! Its definetly the most expensive book I've ever bought at the goodwill... I think I paid $10!! AAH But its been so worth it

I love cranberry cheddar. Raspberry or blackberry are also excellent.

Cheese Muffins!

I don't make muffins very often, but these are the ones I make most often. They're super-quick to make so they're great to make for supper.
