Best vegetarian recipes

I am having some friends over next week for dinner and want a toddler-friendly yummy vegetarian recipe to cook. I cook without meat/fish plenty in my house but all of my best dinner-party recipes are not vegetarian. As far as I know they do eat dairy/eggs etc.

my favorite veggie food is mexican...so many variations. bean or cheese enchiladas, tacos, burritos, mexican rice, guacamole, horchata to drink. also very kid friendly food.

For toddlers, simple foods are best. When you mix foods together into complicated recipes, most toddlers won't eat it.

Macaroni and cheese is a toddler favorite. Cut up raw veggies with dip is another good choice- some toddlers love the dips, others just want the veggies plain, and the adults enjoy them together.
