Pantry Challenge? - Page 3

Pumpkin muffins for breakfast, peanut butter crackers, grapes and milk for dinner for the kids. DH and I had whatever.
Our big meal was lunch today. I was really proud of myself for getting this together. We have started doing Sunday evening activities at church, which go from 5:15 to 7 or so, so dinner gets lost on Sunday. I was able to get a decent meal on for lunch, so I didn't feel bad about crackers for dinner.
Lunch was beef stew from leftover roast, carrots, and potatoes that I put in the crock pot before church. I made an apple pie yesterday with the bottom of the bushel apples that are getting soft. I had some homemade rolls in the freezer and served those with pear butter. It was a tasty, filling meal that was less work to get on the table than PB&J after morning service. DH love the stew. I added thyme to it, and that made it lovely.
Friday we had take out pizza (the first in a long time) and Saturday was free hot dogs from a church while trick-or-treating.

Tomorrow I planned for beans and rice, but it looks like I am down to lentils and white beans. I have Northern beans soaking, but what in the world do I do with them? I have only ever used them for ham and bean soup, but we had soup today. Would they be okay in the Mexican flavored casserole I usually make with black or pinto beans? hmmm....

I didn't really cook much this weekend. Thankfully we had lots of leftovers to get through.

Last night I did make mummy dogs and fries. And with the leftover dough, I made a calzone for dh with leftover steak, onions and cheese.

Tonight we're going taking dinner to my grandma's for her bday. I'm making ham and potato soup, everything's from the pantry except the ham which I raided from my mom's freezer.

I got my November meal plan done and won't need to go to the store for at least another week.

Well I was doing well with my plans, but the last couple days have been really just plain hard. DD has been a terror, although today she's back to her sweet self. DH is sick and I'm feeling a bit tired and just run down.

I was thinking about making some chicken soup today, I have to go out and dig up a carrot though in the rain, not really looking forward to that. I have a bunch of stuff though for soup, stock, chicken, onions, celery and such-so I think I should do it. I even could make homemade stock and bread.

I cleaned my pantry today, oh it sure needed it. Now it is all organized and nice looking again, so much better. I can see what is in there, I moved some of my baking stuff around. I'm liking it.

I need to make my plan for the week, I am in need of veggies, but not much else. Some milk and a couple other things for the week and I'll be able to probably go another week or so without shopping. Which would be great because I am really trying to avoid the store.

Time to make my plan.

I'm in!

Ideally, the only things I will buy at the grocery store this month are milk and bread. I cleaned and rearranged my pantry last week and was VERY startled by how many duplicates I had.

November

1. pasta (holy smoke I have a LOT of pasta!) with sauce, garlic bread, and green beans.

2. Sloppy Joe pie with corn.

3. Blender quiche with broccoli and ham.

What's sloppy joe pie?

Dh and I are going out of town this weekend so I'm trying to clean all the leftovers out so my mom won't have to deal with them (and I won't have to when I get back next week). So last night, we had a few random things. Tonight will be leftovers. We've got potato soup, ds2's chili dog, some steak, some ham, hamburger casserole.

At least there will be plenty of food in the house for my mom to feed the boys.

Freakishly easy dinner that all of my kids like!!!!

Make a baking powder biscuit crust, put it in the bottom of a 9 or 10 inch pie plate, bring the edges up to about 1/4 inch below the rim. Fill it with still warm sloppy joe. Bake it at 400 for about half an hour. Shut the oven off, sprinkle cheese on top, let it sit in the warm oven for like 5 minutes. Sloppy joe pie!

I am trying for the life of me to make a meal plan, but I just am not into it this week. Been kinda going with the flow.

Last night we had sloppy joes, coleslaw and homemade yukon gold fries.

Tonight I making grilled caesar chicken breasts, strawberry spinach salad, and rice pilaf.

I went shopping for veggies yesterday, so I have a bunch of stuff I could make. I need inspiration.

Tonight I made this last minute casserole - I made the chicken and broccoli one, but subbed soy curls for the chicken (we're vegetarian), frozen broccoli, brown rice, cheddar cheese and spices. I made the "cream of chicken" soup using this recipe, so easy! Used vegetarian chicken seasoning/broth powder. My 4-year-old loved it and had seconds!

What's greenie beanie casserole?

We've had in the last 3 nights....

split pea soup using up some chicken stock, dry peas, ends of the bacon package, potatoes, sweet potatoes, carrots, celery, and onion, and the last of the pint of cream. MMMM! Made tasty buns to go with.

Chicken and dumplings w/an 1800's dumpling recipe. USed up more chicken stock, some frozen cooked chicken, various odds and ends of veggies. Really yummy!

Tonight I'm using my last spaghetti squash, a bunch of cherry tomatoes from our garden, basil, bell peppers and making meatballs out of store bought beef because I'm positively craving red meat and we're out of goat. Oh, and the littlest and I are going to make the dumpling recipe and roll it out thinner for noodles (trying to keep her busy while the older ones have their violin and piano lessons).

Greenie beanie casserole in just the green bean/cream of mushroom with french fried onions, Holiday dish. My kids love it so why just save it for special occaisions!

I decided to run the self-clean cycle on the oven Monday and killed it. We are waiting for a part before it gets fixed, so that has altered the meal plan. At least the stove-top still works!
Last night was homemade chicken noodle soup and home-canned peaches. I have the rest of the broth (7 pints) in the pressure canner right now. I have never canned broth before, so hopefully all goes well.
Tonight will be spaghetti, green beans, and Caeser salad using the last of the parmesan.
Tomorrow will likely be a repeat of the soup. I made a ton!
I shopped today and focused on the sale items. (flour, cooking oil) I also bought a bunch of things for the new house, so I don't think I really spent too much on food.

Dinner for tonight is already cooking, I love my crock-pot

Beef stew with a side salad and bread!

I love that the cooler weather lets me cook stuff like this. I am such a slacker in the summertime when it comes to "real" meals. I don't want to cook or eat.

Well tonight we had chicken fajitas, I have a ton of frozen pepper strips from this summer. I also found some pre-cooked chicken strips, so I decided it was a good thing to use up that stuff. I pulled a roast and some burger meat from the freezer. I'm gonna make The Pioneer Woman Cooks pot roast recipe, it is seriously the BEST pot roast ever, so amazingly good.

My plans are:
Mon: pot roast, salad with homemade ranch dressing
Tue: Spaghetti in the crock pot, garlic bread
Wed: Turkey tenderloins, rice, veggies, salad
Thurs: Stir fry w/ leftover turkey, veggies and rice or noodles
Fri: Pizza
Sat: Daddy's choice I'm going out of town for the day to shop

I am really trying to clean out the freezer of weird stuff that's in there. I also want to stock up on some roasts, my store has been having pretty good sales on roasts, and this time of year it is nice to eat that type of stuff.

Saturday my friend watched the kids while DH and worked on and cleaned up our new house (inspections are today and we are hoping to move this week!)
I got home at 4pm and had no plans for dinner. I thought of trying to quickly defrost meat for tacos, but I didn't have any beans soaked to go with them. I love beans with tacos-they taste great and really stretch the meat. Anyway, I remembered this recipe http://www.hillbillyhousewife.com/tacolentilsrice.htm which we love. I put everything in the pot to cook while I shredded cheese and cut lettuce. DH was really pleased with the meal. We had carrot stick to go along side.
Sunday we had a potluck at church. I brought one crock pot with scalloped potatoes and another with a baked ziti type dish that used up lots of odds and ends out of the freezer.
Tonight we'll have tuna noodle on the stove top as the part for the oven is on back order. My kids are asking for muffins, and we finished the freezer stash. Oh well.
