Multiple food allergies - how common? - Page 2

This is really awesome!

I think that FAAN should develop an educational plan based on it. They have the PAL Save a Life program so it sounds like something they might be interested in to combat the bullying:

Just wanted to report that the assignment went really well. Several of them said, unsolicited, that this was a great learning experience.

The woman who drew corn - wow - she learned a LOT, and she was a great sport about it. She read labels, called companies, asked food service workers at the college, read online forums, learned that every slice of bread in our town contains corn syrup...

We had some good class discussion after it ended.

I will update with some of their comments from their essays.

"I felt a lot less bloated and weighted down after I ate, which was good, but the downside to this was I felt less "satisfied" after eating and would have to snack more because the hunger never really went away...I actually enjoyed eating differently, though, and may continue a diet that's less gluten-based - say, one or two servings a day as opposed to 5 or 6 - just for health purposes."

LOL - I'd be very curious what happens when they eat gluten again (especially if they did a 2-4 week trial off gluten). This is a person that might want to get tested for IgG intolerance & TtG (for celiac).

That's so awesome, Susan - what a great idea for an assignment, and I'm glad the students took it so much to heart. Tell the woman who drew corn that she has my empathy .
