Recipe for Safe Ice Cream?

One of my friends on FB just posted about peppermint ice cream in the stores...I'm 5 months pregnant and still nursing my sweet FA 2.5yo, and I was almost on the verge of just making DH go buy some from the store, but somehow managed to show some restraint.

A lot of the alternative ice creams still have stuff we can't eat...hemp milk ice cream was close, but the brand I saw, Tempt, is processed in a facility with stuff we can't have either.

Here's what we're avoiding:
coconut
dairy*
eggs*
gluten
nuts*
peanuts*
soy

*DS tested positive during IgE tests.
Soy and gluten trigger behavior issues in DS, and I get itchy mouth/hives on my lip with coconut

Anyway, this obviously isn't a pressing question, but if anyone has any ideas on how to help a mama with a craving, I know this is the group to ask. Thank you in advance!

Hemp milk in an ice cream maker works. Here's a recipe that allows for a variety of milks - do you have a safe milk?

Is the allergy all nuts? What about cashews or almonds? We are allergic you all the stuff on your list too except cashews are fine. I make a wonderful ice cram with cashews, strawberies, and maple syrup. And it turns out well without an ice cream maker.

I don't have an ice cream maker, but I do have a vitamix blender. We are also avoiding the same things you are. When we have an ice cream craving, I usually just throw in a bunch of frozen fruit into the blender and let it go, and it makes a very nice sorbet. Otherwise, if I want more like ice cream. I put whatever safe milk we can use, ice and flavorings, fruit, whatever else I want to add to it and do the same. It ends up like a soft serve consistancy, but it's yummy!

Thank you, mamas! I have never made my own ice cream, nor do we own an ice cream maker, but it sounds like we will be soon...

Bluebird---I don't know about cashews and almonds. I'm just too scared to trial them right now...our allergist gave me a stern "no nuts at all" talk and said not to try any until we retest DS when he turns 3.

Thanks for the ideas, everyone! I had heard of gluten free goddess, but assumed her recipes were only gluten free!

I haven't looked recently, what are the ingredients of Rice Dream ice cream? I thought it was the same ingredients as their rice milk, but with added carageenan. If so, would that work?
