Uh-huh to all that. The yams I've gotten have been from Asian markets. And yeah, yucko to the marshmallow sweet potatoes. I much prefer a creamy casserole like the one I posted about upthread, or just a nice big pan of oven roasted sweet potatoes. MMMM!

My oldest dd makes sweet potato empanadas for our appetizer plate each year.

Southwestern Corn and Sweet Potato Soup
(from the Moosewood low-fat cookbook)

This is seriously delicious. The only thing is that the recipe makes barely enough for four people. Definitely double it.

1 cup finely chopped onions
2 garlic cloves, minced
1 serrano, seeded and minced
1/4 tsp salt
3 cups Vegetable broth
2 tsp ground cumin
1 medium sweet potato, diced (~2 cups)
1/2 red bell pepper, finely chopped
3 cups fresh or frozen corn kernels
salt
lime wedges
cilantro, finely chopped

In a covered soup pot, simmer the onions, garlic, serrano, and salt in 1 cup of the vegetable stock for about 10 minutes or until the onions soften. In a small bowl, make a paste with the cumin and a tbsp of the stock, stir into the pot, and simmer for 1 to 2 minutes. Add the the sweet potatoes and the remaining stock and simmer for 10 minutes. Add the bell pepper and corn and simmer, covered, for another 10 minutes or until all the vegetables are tender.

Puree about 1/2 the soup in a blender and return it to the pot. Add salt to taste and reheat on low heat. Serve with lime wedges and cilantro.

I like this recipe that I came up with. I make it without the chicken or breadcrumbs as a side for thanksgiving (can't stand the candied yams type of sweet potato casserole with marshmallows on it, it gives me shivers!)
To make it a little healthier, substitute chicken/veggie broth for the milk.

Herbed Sweet Potatoes and Chicken

-= Ingredients =-
1/2 cup Milk
3 tablespoons Butter
1 teaspoon Salt
1/8 teaspoon Cayenne Pepper
1/2 teaspoon Parsley
1/2 teaspoon Rosemary
1/2 teaspoon Thyme
1/2 teaspoon Garlic
1/2 teaspoon Onion Powder
1 teaspoon Mrs. Dash Garlic and Herb (optional)
4 Sweet Potatoes
4 Chicken Breasts
1/4 cup Italian Seasoned Bread Crumbs

-= Instructions =-
Preheat the oven the 375°F. In a small saucepan, melt the butter and milk together. Add salt through Mrs. Dash (all the seasonings) and stir over medium heat until very fragrant. Peel and dice the sweet potatoes into bite sized pieces. Add to herb mixture in pot and stir until well coated. Place in the bottom of an oven safe baking dish.
Beat the chicken breasts until thin. Cut into quarters and position over the sweet potatoes. Sprinkle bread crumbs over top of each piece. Season with Mrs. Dash if desired.
Bake covered in oven for 40 minutes or until sweet potatoes are softened and chicken is cooked through. If a crunchy topping is desired, remove lid for last 15 minutes of baking.

Or you can shop the chicken into bite sized pieces and mix it all together
OR you can just skip the chicken and bread crumbs making just the potatoes (which is what I do for thanksgiving dinner, soo good!)

Please keep in mind that the measurements are my ESTIMATES since this is something I came up with as I was going.

I'm not a fan of mashed sweet poatoes, but have been known to top them with sour cream & Worchestershire sauce, and they are delicious that way! We also do sweet potato black bean burritos, but usually add some greens into the mix, as well.

Could you please post the sweet potato black bean burrito recipe? It sounds SO tasty!


I use them regularily in soup.

Dice 1/2 onion, sautee in oil/butter until clear. Add diced garlic cove or two, then 3-4 chopped carots, 1 yam/potato with skin on, chopped, and maybe 1 cup red lentils. Cover *just* to top with water and boil then simmer, stirring so lentils don't stick. When veggies are soft, add coconut milk (usually it's about 1/2 the can that is actually the thick, good stuff, so add that. The thick stuff, not the coco water!) plus a handful cilantro. puree all of it and then season with salt. Heck, make double, it freezes great.

The kids eat it with toast, I eat it with yogurt. yummy!

We found that we like it much better w/black beans. I've been making these for about 10 years now. One of very few repeat recipes in my home.

I don't know how I missed this post. Now I'm hungry and this is definitely going on the "make soon" list! I think I would serve w/lots of fresh cilantro.
