can you freeze seitan?

I am preparing meals to freeze so that dinner is super easy to do once our baby arrives in December. I make my own seitan, but have never tried to freeze it. I wouldn't freeze the whole hunk of it, but do some kind of like seitan tetrazini casserole and freeze that. Would it turn out ok once thawed?

I freeze mine. I think it freezes well. I've frozen a whole chunk of it so far (8 oz since that is the size I use generally). It thaws fine. I actually have a book Vegan on the Cheap that includes seitan recipes with instruction to freeze.
