So, I need some help on the topic of potato dumplings. I'm trying to use up the leftovers of a meal I made a couple days ago. I've got a bunch of roasted chicken meat, a load(over half gallon) of stock I made yesterday from bones and such, and I've got a pretty big bowl of some awesome roasted garlic and herb mashed potatoes with cream cheese in them.
But I'm not sure what to fix using these things. I know that I can make a really fabulous pot pie/stew base with the chicken and stock... The traditional peas and carrots in a thick gravy thing. I really want to use up the potatoes though. I'm staying with the in-laws, and they aren't very adventurous in their food choices. I was thinking I could do Shepard's Pie, but thought Chicken and Dumplings might be more up their alley.
I thought I could use the mashed potatoes in the dumplings... But I have never made potato dumplings before. I really have NO CLUE if they are even similar enough to traditional dumplings to be something my in-laws would enjoy. I've found some recipes online that I thought I could use, but wanted to get some opinions here first. Are potato dumplings tasty? Similar to the biscuit-like dumplings(I'm so NOT thinking those square doughy ones)? Do you have a recipe you like? Should I just go with Shepard's Pie instead? Thanks!
