I would like to make bean burritos tonight.I usually buy canned vegetarian refried beans. But I am try to do a pantry challenge, so I would like to use what I have-1 can of kidney,4 of cannellini,2 of great northern or2 of black beans. Need to feed 3 low salt ,spice phobic vegetarians with something similar texture to the refried beans. Ideas?

I would use the black beans. Just cook them for about 5 minutes and then mash them up a bit with a fork or potato masher. I personally would add a little salsa (pureed for the tomato-phobic DS) or taco sauce to add some flavor, if that's not too spicy for your crowd.

Yep. That's pretty much exactly what I was going to say!

I cook my black beans with onion, garlic, cumin, chile powder & cayenne (you could just use a little pinch/cut back on them) and a little water. I cook it for like 10-15 minutes covers and by then some of the beans are kind of mushy others are chunky and I just use that in my filling. Very yummy - I think that's going on the menu this week!
