Just ate the most amazing sandwich

It was one of the best and easy sandwiches I have had in a long time. If you are craving something pretty substantial but also full of good fats and veggies here is the perfect sandwich. You could probably add roasted red peppers if you had them on hand to make this even better.

Ingredients:
organic rosemary focaccia type bread
organic unsalted butter
baby swiss cheese
large handfuls of fresh sprouts
avocados mashed
sliced mushrooms
fresh spinach leaves
raw red onion
tiny bit of olive oil

In a small pan I cooked down the mushrooms with a tiny bit of olive oil and then took off the heat and sat aside.
Sprayed a light layer of olive oil over another hot larger pan then placed the bread (a bit of butter on each slice) on the pan and put a thin layer of swiss, sprouts, fresh spinach, and red onion, then another thin slice of swiss and topped off the other piece of bread. Flipped when ready to brown the other side then stuffed the mushrooms and avocados in the middle when done. It was a hit here

That is what I was told the cheese was, but I am not really sure what that means. It is very good though and melts well. There are two varieties of swiss that I know, lacey or baby which I guess is normal Swiss.
