egg free cornbread?

So...no, I'm not a vegan, or even a vegetarian. I was for over 20 years, and then something happened. This isn't Veggie anonomous or anything...but I used to bake at this vegan cafe back in my early twenties, so I know really wonderful vegan cornbreads are out there somewhere....
Does anybody have any that they swear by?
I need to find one for a good friend of mine, as well as the days we run out of eggs.

Any ideas?

If you prefer a sweet cornbread (as I do), I have always used the recipe that comes on the box of cornmeal (Quaker or Aunt Jemima - can't remember which one it was since I usually buy my cornmeal in bulk now.) Non-dairy milks and egg replacer work very well in this recipe - I've even used coconut milk (the kind that comes in a can) thinned with water when I've been out of soy or rice milk.

1 1/4 cups all-purpose flour
3/4 cup cornmeal
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup "milk"
1/4 cup vegetable oil
Egg replacer equivalent of 1 egg

Mix it all together, bake at 400 F. for 20-25 minutes. Comes out great in a baking dish or as muffins.
