Need your favorite vegan recipe using head of cabbage. :)

*Ooops* This was supposed to go in the vegan section!!!

I don't like cabbage and my DH does. We got a head of cabbage from the farmer's market and now... I'd like some ideas for vegan recipes that use a whole head of cabbage. No cole slaw, btw.

Curried cabbage is by far my most favorite recipe for cabbage (and I don't like cabbage), but I am looking for a cooked recipe. If you can use bell pepper, vegetable stock, and potatoes, too... EVEN BETTER!

Colcannon?
There's lots of recipes online if you do a google search - most have milk & butter, but can easily be subbed for non-dairy versions. It is basically mashed potatoes mixed with cooked (boiled) cabbage. You could use your stock instead of the dairy in a recipe & I bet it would be yummy!

I keep shredded cabbage on hand almost all the time. I throw it into soups, tofu scrambles, I use it instead of lettuce in burritos, tacos and other wrapped sandwiches. I add it to stir fry. Ooooo, great ideas!

I like the vegan colcannon idea because it uses ingredients I already or usually have. I have never heard of colcannon.

ETA: Just found out that this recipe uses kale... read instructions and it says kale is used instead of cabbage. *whew* There's still cabbage in there.

I just juiced a whole red cabbage, straight, and it was so good!

My DH would enjoy the Ethiopian recipe... and I have enough cabbage to try that recipe too.

My fave way to eat cabbage is fried. Heat the oil pretty hot, cook the cabbage until it starts to brown in places and is cooked and sweet, add salt. yum!

Similar to Magelet, i fry it up in plenty of good fat. Start w an onion, cook until just starting to brown, add the cabbage and cook it gently until it has roughly the consistency of cooked spinach. It takes a bit of time, but it is so soft and decadent.

The Ethiopian dish is a keeper. I still have half a head of cabbage left. Next? The colcannon. I'll save the simple fried cabbage on days I don't feel like cooking. Sambal oelek is not a spice I have in my spice rack (and I have tons)... neither is rice vinegar, dry sherry, and hoisin sauce... so I will have to skip those... although the fennel-cabbage combo sounds interesting (fennel being a galactagogue... and I need those, right now).

Vegetable soup is good with cabbage.
Also Lazanki is good. I think it makes a good side dish for stir fries.

I think phyllo dough is vegan, right? Not sure. If so, you can make samosas with cabbage and onion sauteed and a little bit of cumin and whatever spices you like. A man could easily just pop it in his mouth and not notice the softened cabbage.

My omni family all likes the hot and soup soup recipe from veganyumyum.com it has lots of cabbage in it.
