Egg replacer for tapioca?

I have some Minute tapioca in my cabinet that I want to make, but it calls for an egg. I don't have any egg substitute. Is there anything else I can add instead? What if I just left it the egg out? What do eggs do for pudding?

It's totally to satisfy a pregnancy craving, so even if it's sub-par tapioca I'll still be happy. Thanks!

tapioca should thicken it enough by itself without the egg. i like egg for added protein & flavor (not vegan), but you can just add soy milk if you want more protein. if it really doesn't thicken enough, add cornstarch and reheat.

I left the egg out and it turned out great with lots of fresh peaches. Thanks! Now that I remember how good it is, I'm going to make it from scratch next time. (Maybe tomorrow!)
