ISO Fried Rice Recipe

Can someone share a good one? DH is on a fried rice kick lately so I need to create something at home!

I'm a big fan of Barbara Tropp's traditional fried rice.

I use (cold) leftover rice and stir-fry it in salad oil with lots of black pepper and Bragg's. Then I do the same with chopped carrots, green pepper, peas (frozen/thawed), and any leftover meat (chicken or pork). Last I scramble an egg and cook it the same way with the oil and pepper & Braggs, then toss it all together. Yum!

We eat fried rice at least once a week around here; basically whenever we find it to be 5 p.m. and we have nothing planned for dinner.

 

Cut up some carrots, about the same size as peas.  Put them to boil.  Add the same amount of frozen peas to the water.

In a wok-ish, heat over high heat a few drops of sesame oil with some regular cooking oil.

Add a couple eggs.  Scramble them a bit while they cook.

Add some leftover rice.

When the carrots are soft, strain them and the peas and add them to the rice and eggs.

Drizzle some sesame seeds overtop.

Add soy sauce and a tad bit of teriyaki (we use Soy Vay).

Salt and pepper.

Fry it up.

I dont follow a recipe, but I make it whenever i have cold rice in the house.

I heat up my CI wok nice and hot with some CO and a drizzle of sesame oil (and chili oil if i'm in a spicy mood). I add garlic and ginger, and the rice. I get the rice nice and hot and stir in frozen peas, cook until they're hot and then add shredded kale and then a scrambled egg. Add a drizzle of tamari and its done. If i have green onion, it goes in at the very end or even sprinkled on top.

But this is my most favorite way to eat kale.

We eating this a lot, too - I generally make it when I have leftover rice. I'm not big on dishes so I make it one-pan style...

 

I start by chopping up some garlic and/or ginger and frying it in some oil (sesame, usually, but whatever you like), then pushing those to the side and adding whatever veggies and tofu we have around (chopped into approx 1 cm square chunks) and frying that up with some soy sauce squirted on. When that's all crisp-tender I push it to the side (this works better in a wok but you can use a larger frying pan) and fry an egg or two in the middle (add a little more oil first if necessary), then I mix that in with the veggies, and then I dump in the rice and more soy sauce and mix that all together and cook and stor over medium until it's hot.

 

Sometimes I add nuts or sesame seeds... or tempeh... really, it's a way to use up leftovers and veggies that are looking unhappy...
