Help me cook my grassfed veal roast.

I bought a beautiful humanely raised grassfed veal roast from our local farm It's frozen, so there's no real rush .... BUT I'd kind of like to make it soon. I've never cooked grassfed beef before, but I'm aware it's easily overdone. I was hoping to make a roast, with roasted veggies, and garlic and whatnot, and have it cook for a few hours. Is this even possible with grassfed veal?? Will that overdo it? Should I cook it in a stew?

Help, please!

What type/cut of roast is it? That makes all the difference in the world.

A meat thermometer would be a good 99 cent investment. Grass fed roasts can be really delicious at 115 - 120 and even the "pink meat haters" like myself shouldn't cook them to over 130. :-)

The type of roast may make a little bit of difference. We cook our beef the same no matter the cut if we are roasting like you would like to do. I agree with using a meat thermometer, that will help. Just make sure you add liquid to the bottom of the roaster and baste throughout the cooking process. We have been eating grassfed beef for 14 yrs and love roast and veggies. Worcestershire, bay leaf and garlic are essentials.
