sour milk recipes

I'm looking for some recipes that use sour milk. I always end up throwing away that last little bit of raw milk, but I would love to be able to use it in something. Ideas? Right now I have a good milk that is too sour for any of us to drink.

Oven pancake or regular pancakes are my go-to. We use a lot of buckwheat and some oats since DH has gluten issues.

Not sure if you have a regular pancake recipe already, but I make it with:

-sour milk
-buckwheat flour
-baking soda (leave out during soaking process, I think it neutralizes the acid somewhat)
-an egg or two (obviously left out during soaking)
-salt

all mixed up, soaked over night, and fried in butter.



Oven pancake (this is a Finnish thing, not sure about other Nordic countries)

-about 3 cups sour milk, or sour milk+water and/or fresh milk if there's not enough sour milk
-about 1.5 ish cups of buckwheat flour (wheat works too)
-about 1/3 to half a cup of flaked oats
-3/4 tsp salt
-2 or 3 eggs
-2 tbsp of oil (I use coconut)

Mix together into a batter (it can seem pretty thin) and pour onto wide shallow oven pan (like a cookie sheet) either greased or lined with parchment paper. You don't want it to be too thick, maybe like half an inch. For a soaked recipe, just leave out the eggs and oil until you're ready to cook, then beat them in. Bake at about 400 for 30-40 minutes. This is good as "bread" with soup or cheese and veggies, or sweet with whipped cream, maple syrup, fruit etc.
