Nog without the egg?

DS has an egg allergy, so regular eggnog is out for me until he weans. But I loooove it so much. I was checking out all the nog analogs at the store and all have "natural flavoring" which always makes me nervous (we're also gf and have to be really strict because of trace reactions.)

Is there a recipe for an egg-free nog that still tastes yum? It doesn't have to be exactly the same since I haven't had it in so long I wouldn't know the difference.

What I do is put 1/4 cup of raw, unsalted cashews in the blender. I add nutmeg (1/4 tsp), cinnamon (1/2 tsp), vanilla extract (1 tsp), rum flavoring (1/2 teaspoon, and you can omit it if there isn't a brand that is safe for you - maybe add a little real rum) and dark brown sugar (1/4- 1/2 cup depending on how sweet you want it). Then I pour enough vanilla soymilk to allow it to blend (at least a cup) and blend it until the cashews are completely dissolved into the drink. Then I decant it, pour in the rest of the quart and stir. Chill and serve topped with grated nutmeg. My immediate family is vegan, but my extended family is not. This was a hit with everyone, from the 4 year old to the eggnog connoisseurs. I'm sure you could use plain animal milk if you wanted, but increase the vanilla if you do.

I made some tonight! It was so easy, and delicious, and tasted great...

50ml almond milk, unsweetened
50ml light coconut milk
1 Tbsp maple syrup
1/16 tsp cinnamon
1/2 tsp rum extract

Put it all in a bowl, and whisk! Top with grated nutmeg, if you please.

Seriously, it was so good! And it only took a minute to make.
