I made a killer carrotlasagna last night. ::D Very, very yummy, and easy, too! So that was dinner last night.

Tonight I was lazy. My son ate meat (sausages) with his dad, so I just heated up some tortellini (filled with pesto), peas and a pastasauce. Nothing fancy, but it did the job. :lol:

Ah, the secret to tofu "eggs" is mustard. Dried or wet, you must add it toward the end of cooking, enough to yellow up the tofu a bit, err on the side of too much rather than too little. We also use garlic powder, salt, pepper (sometimes paprika). The mustard makes all the difference!

 

We prepped potato/turnip soup to make a massive pot---using the creamy "herbed potato soup" recipe from allrecipes.com only doubling (or maybe triple) with turnips coz I need to use them up and they work well in potato recipes. We use plain soy milk instead of dairy, and it's delish!

 

Shepherd pie with: turnip, onion, carrot, a lil egglplant, chickpeas, chopped kale, nutritional yeast gravy and mashedy tato topping, YUM!

 

Going to make rice and fried tofu with spicy sweet yellow tomato dipping sauce, probably kale on the side?

 

Butternut squash soup

 

Spaghetti squash served like spaghetti

 

going to try the vegan dad blog soy-free sausages

 

maybe falafel? coz I lurrrve it!

 

bbq tempeh pizza with the last of the summer squash and eggplant

Last night was a quick thrown together meal of fried rice, tahini noodles and spring rolls. I started a food blog so I can actually LOOK at the food we eat over time. So far I am not very proud of what I am seeing, but it has only been 2 days so hopefully it will get better

I get mine at Whole Foods. Morning Star makes a version that I really like, although its not vegan (has some egg white in it), but there are also brands that make vegan bacon.  I have a couple recipes for make-it-yourself veg bacon, although I have never tried that yet.  Tempeh bacon is really good, but I've never seen it in stores, only had it at restaurants.

I'm really proud of myself, it's Monday and I've already checked on what will be coming in the CSA box, made the meal plans for the whole week, organized the fridge, and grocery shopped. . .and this includes for Thanksgiving.  Oh and I already washed and chopped the veg for the meals of the next two nights. Woo, I'm on a roll.  banana.gif

 

 

So tonight is seitan and mushrooms in a red wine sauce with linguine.  

 

Tue is butternut squash risotto with broccoli on the side.

 

Wed is bok choy and tofy stir fry with brown rice.

 

Thursday is the whole kit and caboodle. . .big ol' vegan Thanksgiving dinner with tofurkey, smashed potatoes, sauteed leeks and chard, stuffing, cranberry sauce and pumpkin pie. I'm hungry just thinking about it!

 

Fri is our anniversary so we'll be going out to dinner, but hopefully we'll have tons of leftovers too! 

 

p.s. Thanks for the idea for the potato, kale, sausage soup. . .I didn't have white beans, but made it anyway and threw in a few lentils instead and loved it. So I made it a second night only with sweet potato instead of while potato and it was even better.  My DS loved it too!  Very good way to use kale.

Last night was eggplant parm, spagetti, and green salad.

 

Tonight I rediscovered my love of lentils and rice. Sadly my boys wouldn't even touch it splat.gif It was a lemony rice and lentil pilaf with green beans on the side. So yummy!

Made the vegan dad sausage, and it IS as rad as all his commenters say! So that will become part of our larder---I like that it can be frozen right after steaming. I think I ill start making a trip batch once a month or so. Also going to try his tempeh burgers that use the sausage recipe. Dh has requested sausage calzone with mushrooms and creamy sauce :p

 

Had some AMAZING faux duck for T-day but couldn't get the recipe :(

 

Otherwise, pretty boring here. Lotsa potatoes due to CSA bounty. DD is at gramma's, so dh and I have been eating really simply. Last night was canned chana masala, rice. and sweet/savory eggplant/carrot mix. The night before that was the leftover faux duck, tatoes n gravy, and just sauteed green peppers and onions. Tonight is the yummy shepherd pie from the freezer (I made three pies when I made it the first time).

Not quite as organized this week. Oh well, last weeks motivation was pretty rare. shake.gif

 

Last night was the last of the Tday leftovers. . .yes, I made way too much stuffing and potatoes!

 

Tonight I think I'll repeat that kale, bean soup b/c DS and I loved it so much and DH never got to try it.

 

after that it's chili and cornbread. . .one of my favs, but I haven't made it in awhile.  

 

I'll have to see what the CSA has in store for me after Wed.

Made Vegan Dad's sausages and roasted root veggies (carrots, yellow potatoes, parsnips, and Cippolini onions) tonight. It was good but I swear I can never get the seasoning right on those sausages. They turn out good but no matter what I do I always feel like they need more seasoning of some kind.

last night i made baked ziti with the tofu ricotta from v'con w/ roasted brussel sprouts.

the night before was mushroom and quinoa stuffed mushrooms.
