Kombucha and caffeine

OK, so I'm new at this whole komucha thing, but I bought some bottles of it (GT brand) to start my own and grow my own SCOBY. One I put in w/black tea and sugar and another bottle I'll try w/just itself into a glass pyrex as per the instructions on growning my own scoby thread.
Here's my concern. Everyone says it needs caffeine, right? Well, my breastfed LO tends to be affected by caffeine so I like to avoid it as much as possible. Is the synergy caffeinated? Is there a way to make it w/o? Does some of the caffeine somehow die off in the fermentation process? Help! I'm craving it all the time, but don't want to drink much if its strongly caffeinated!
Oh, and somewhere I read the tea in the first brew making the SCOBY should NOT be organic--enlighten me, please

I'm sensitive to too much caffeine, too, and I'm not affected at all by my kombucha. I've read that the metabolic process eliminates almost all the caffeine. I think you should be ok!

And I just started making kombucha a couple months ago so I haven't experimented too much but my next batch will be with rooibos tea which apparently makes a delicious drink!

I make herbal Kombucha. It dose not need to be green tea or black. I use a mix of chamomille and hibiscus. It turns out lovely every time. I do not drink black or green tea as it is resricted by my religion and I have have great luck for years making it like this. I have a batch made from Organic Easy Now tea from Traditional Medicinals brewing right now and it has
Peppermint Leaf, Spearmint Leaf, Passion Flower Leaf, Valerian Root, Licorice Root, Catnip Leaf, Chamomile Flower, Rosemary Leaf, Lavender Flower .

The Scoby grows from the sugar and not on the tea. My dad is a natropath and also has a degree in chinese medicine and he taught me how to make kombucha. ;0)

Oh, good to know! i have tons of herbal tea i can make it with!
