Sweet corn cake?

There is this bready thing called sweet corn cake I have had in Mexican restaurants. It has pieces of corn in it, and is like a sweet, moist, unformed cornbread usually scooped with an ice cream scooper. Does anyone know how to make this - specifically TF? I'd like to make it for Thanksgiving.

Ok, not TF, but Chi Chis has a mix for that. Maybe google recipes for Chi Chis corn cake or chi chis corn spoonbread (or maybe tex mex corn cake or spoon bread) for recipe ideas. Then, to make it more TF, soak the cornmeal overnight, use butter and cream, etc. You can sub a little maseca (corn masa, corn flour nixtamalada, etc) but not too much, you really need the cornmeal for the right texture.

MMMM .... I LOVE that Chi Chi's mix, so delicious!  (with a whole stick of butter!)

 

But I was just coming on here to ask for a good corn bread recipe, because mine comes out so dry and crumbly. Yuck.

 

I saw Paula Dean make "spoon corn bread" on TV the other day, so I might try that.  It has green onions in it too.

This is my fave cornbread, i use yogurt instead of buttermilk and you can just let it soak. I cook it in my CI skillet instead of a loaf pan. http://www.epicurious.com/recipes/food/views/Buttery-Cornbread-236502

Here is a recipe for homemade masa (corn flour) and tortillas, you could possibly tweak the recipe to make it into the sweet corn dish.
