I have the meat of about half of a roasted chicken, homemade bone broth, various fresh and frozen veggies, and gf noodles. I want to make chicken soup. Can I just throw everything in a pot and simmer until the veggies are tender? All the recipes start with raw chicken but I just want something quick and easy. Wishful thinking?

I always start soup by sauteing chopped onion, celery, and carrot until the celery is getting tender. I put that in a pot with the stock and the meat and some parsley flakes, oregano, and garlic powder. If I want a thicker and more vegetable-y broth, I saute twice as much of the vegetables and after they are soft, put half of them in the blender and puree them and then put the puree into the soup. If I want to add potatoes or noodles, I boil them separately and put them in when they are perfectly done and the soup is already done cooking - that way I don't get noodles or potatoes that are falling apart in the soup.
