Tofu?

I would like to start eating more whole soy products like Tofu and less meat (maybe even completly eliminate meat from my diet). Where do I start? I know there are Silken, Firm, Extra Firm etc. Silken is used for like for desserts right?

Must be clean and healthy. I am on my weightloss journey.

Silken tofu is good for pureeing into sauces or as an egg replacer in baked goods, and can be used to make a chocolate mousse. I like firm tofu fried or scrambled like an egg, and prefer extra firm in curries and stir fries.

If you're wanting to eliminate meat from your diet, don't overlook the protein value in other legumes - we eat a lot of lentils, black beans, chickpeas and navy beans here, as well as peanut and almond butter.

You might want to rethink soy products.  If you have any hint of any thyroid issues in your family, or have had any yourself, then I wouldn't touch tofu (or any soy product) with a 10 foot pole.  When I started eating lots of soy, my goiter - which had been sitting there the same size for at least 18 years - suddenly started growing, and I had to have my thyroid completely removed.  It was only later when the frozen section revealed absolutely no cancer, that I started searching for the "why", and then I learned of my mistake by eating soy.  :(   Not only is soy goiterogenic, it also lowers your thyroid hormone levels (essentially your metabolism) - even if you have no thyroid any more like me.  So that means you will have an even harder time losing weight.

 

My DH has been a soy-free vegetarian for years.  Nuts, seeds, and beans are what he has eaten instead.  Plus good protein grains like quinoa.  If you are not going totally vegan, then doing some dairy in moderation is good too.
