I don't eat fortified or processed foods because the body does not absorb the nutrients well and it can disrupt good digestion and metabolic pathways. For example iron salts can feed gut flora to the point that the flora equilibrium is severely unbalanced.

So can you eat a complete and healthy vegan diet without eating non-traditional soy (traditional soy products are made from immature or fermented mature soybeans), fortified foods, or processed foods? Where would you get enough iron and B12 without resorting to animal products? Also how is the GMO problems dealt with within the traditional food vegan community? Where would you even find non-GMO soy, corn, and wheat products within the US?
