Can any one point me in the direction of some reputable articles about vitamin absorption being better with whole fat dairy as opposed to reduced fat? TIA

Here is a website: http://www.dairyforall.com/nutrients-in-milk-fat.php

With this quoted from it:

Quote:
Various vitamins present in milk are as follows. Fat Soluble Vitamins - include vitamins A, D, E and K. Water-soluble vitamins are the, B1 (thiamine), B2 (riboflavin), B6 (pyridoxine), Biotin, Niacin (nicotinic acid), Pantothenic Acid, Para-amino benzoic acid, Inositol, Choline, Folic acid, B12, and Ascorbic acid. Fat rich milk products contain large quantities of fat soluble vitamins, whereas whole milk, skim milk, buttermilk and whey are a good source of water soluble vitamins.

However, when milk is pasturized and homogenized many of the natural nutrients are killed off. Raw milk is whole milk with the nutrients intact and working together so it's digested easily. Putting butter (milk fat) on vegetables helps us absorb the nutrients in the veggies too. Blog article here:
