Does anybody have a recipe for a vegan casserole with beans/veggies/sauce that they love? I'm looking for hearty dishes that can be made early afternoon and baked later for dinner especially.Â

ETA: I found the chili too much so halved it the second time.
Ooo we made an absurdly delicious green bean mushroom casserole topped with french fried onions last year! I keep debating making it again this year, I want it so bad, it was so yummy. I don't think I am up to the work, though, not with a 4 month old and a 2 1/2 y/o. We just followed a normal recipe and used margarine and soy or rice milk instead of milk and butter. But we made our own cream of mushroom for the recipe, and did the french fried onions, which wouldn't be so bad with a fryer but we don't have one. I think we just looked the recipe up on the internet to convert.
