fave thanksgivin' recipes
i'm really lucky b/c most of my family is dairy, meat, and egg free (though they ocassionally eat fish), so thanksgiving is a vegan feast of epic proportions. some of our favorites:

seitan and root veggie stew in roasted pumpkins
roasted garlicky cauliflower
pale ale kale (kale w/ apples, peppers, and beer)
mushroom sage stuffing

My fave veg*n fall feast foods:

Roasted stuffed squash--I like a walnut/mushroom stuffing in any squash, but acorn squash is the best with this IMO esp. if you can parboil the halves then grill the rest of the way and then stuff right before serving

Mashedy root veggies (not just tatoes but also turnips, carrots) and nutritional yeast gravy
Â
Shepherd or Pot Pie using mushroom/onion/yeast gravy over sauteed seasonal veges and chickpeas, potato or reg crust topping
Â
Falafel--big patties with lotsa mint and garlic ![]()
Â
Pumpkin Cheese Cake (can be veganized with tofutti cream cheese)

My sis made a really good not-too-sweet sweet potato dish with nut topping instead of the usual umm marshmallows?

Roasted corn, YEAH!! soak ears in water with husks on for at least 15 min then grill for abt 15, place on platter, visually rich and delicious!

Stuffed mushrooms--wipe clean, pop off stems, sautee chopped stems, onion, garlic, sunflower seeds with other spices and then restuff into caps, can mix with cream cheese or feta or vegan cheese before stuffing caps, too (but not necessary to add cheese at all)

Butternut Squash Bisque would be heavenly, can use soymilk

Rolls or other yummy homemade bread

Soysage (or could use soy-free meat analog), sliced apples, garlic, onion; sautee all in butter-like substance, make sure to add brown sugar and savory herbs, a little salt, soooo goooood!!

And this is a winner: Garlic encrusted roast cauliflower! Take prepared garlic paste (like the kind you can find in big jars or tubes already prepared), apply liberally all over rinsed cauliflower head, shake on salt and optional sesame seeds/cracked pinon/sunflower seeds, roast in oven til soft (sorry I just make this on the fly, I think 350 for an hr but not sure), I often start it out carefully covered in a pan with a small amount of water in the bottom so as not to disturb the garlicky surface, then remove the cover and turn the heat up toward the end---the garlic paste and salt will carmelize and form a yummy crust all over the tender cauliflower head :P

That's all I can think of for now, my list definitely needs more dessert items ;)

Seriously so good. This will be the first year I'm not making it because I'm being lazy :(. But I might just have to make it sometime soon for dinner when I have more time!
