Last winter we did soup once a week, and I think we'll go back to that again now.  Here are some of ours:

 

French country chicken stew

Chicken noodle

Buffalo chili

Veggie and white bean with rosemary

Roasted vegetable soup

Italian lentil

Chicken, mushroom and soba with miso

Curried butternut squash with chicken and rice

Butternut squash and apple cider soup

There is a local family who makes home made organic soups that are super delicous and they come in nice large containers to last us a little while. So we get-

 

Chunky tomato

 

Split pea

 

Chunky vegtable

 

Steak and vegtable

 

Chili (I make that one)

Soup is my kiddos' absolute favorite meal!  In fact, one super hot day this summer my daughter said to my mom, "I can't wait for winter so mom will make soup again!" 

 

But I'm realizing in reading this thread that I don't branch out very often into new soups, I think tonight I'll try that baked potato soup......yum! 

 

My most often made soup is chicken and veggie.......chicken broth cooks all night in a crockpot, then I saute onions, carrots, and celery.  To that I add in the broth, shredded chicken, salt and pepper, and whatever veggies I have on hand.  Yum!!!

I usually have chicken stock on hand, and use it as a base for split pea, lentil, and sausage/kale. Those, and chili, are my go-to soups in the winter. In summer, mostly because I'm not working, I'll often make a light vegetable soup with miso stirred into the chicken stock and eat it for breakfast.

 

I just got back from eating oxtail soup at my favorite Korean restaurant. Mega-yum!!!
