I made this tonight for dinner.  I adapted it a little from happyfoody.com's original recipe.  It was sooo good!  :)

 

1 large onion, diced
1 large clove garlic, crushed
1 tbsp olive oil
...Sautee until fragrant

Add:
2 large diced carrots
3 cups chicken or vegetable broth/stock plus 1 cup water
1/2 cup shredded pre-cooked chicken (optional)
1 cup red lentils
1 15-oz can plain tomato sauce
A few dashes crushed red pepper flakes

A bunch of salt, garlic powder, turmeric, and cumin
About 2 tbsp chili powder

Simmer for about 45 minutes or until carrots and lentils are soft. Serve over tortilla chips and sprinkle with grated cheese.Â
