Anybody got a tried and true recipe? I'd love to make one for Thanksgiving.

I don't have a recipe for you, so feel free to ignore me if you want. orngbiggrin.gif

I've never made sweet potato cheesecake, but have made lots of pumpkin ones - I think they'd be pretty similar.

For the pumpkin cc, I just use a regular (plain) cc recipe & add in pureed or canned pumpkin (~1C per large cc) & spices (cinnamon, nutmeg, ginger, clove - ~1t total).  I put it in a gingersnap crumb crust instead of graham cracker.  You can buy gingersnaps & crush them or make your own & let them get a little stale then crush them.  Use in place of graham cracker crumbs in a regular cc recipe.  I top the cc with whipped cream & sprinkle on a little cinnamon or nutmeg.  Sometimes I add marscarpone cheese to make the cream thick & yummier!

So, if I were doing a sweet potato cc, I'd probably do all the same but use roasted, mashed sweet potatoes in place of the pumpkin.  I might even add in some orange extract b/c the best sweet potato pie I've ever had used just a touch of orange extract.  You could reduce or omit the spices if you wanted.

Good Luck!  I hope you get a yummy one for your holiday!!
