Vegemite for folate

So we'll be TTC in a couple months and I'm trying to up my folate intake. I've been eating chicken livers once or twice a week, but starting to get tired of them. I just read that vegemite is high in folate and I'm thinking about picking some up. I've had vegemite on bread with butter and that wasn't bad. Is there anything else can you do with vegemite? How do *you* eat it?

I can't stand the stuff as it is, but I use it as a broth concentrate. We're vegan, so I use it in things I am trying to impart a beefy flavor to- like lentil-nut stroganoff, shepherd's pie, french onion soup.

Mmmmmmmmm! i LOVE vegemite!

 

Toast with vege, avocado and cheese is one of my fave things

 

vege and cheese sandwich

 

homemade cheeseymite scrools (bread dough sread with vege and grated cheese rolled up like cinnamon roll)

 

a spoon in stews, gravies and soups makes it yummy

 

vege, tomato and cheese on crackers

 

on buttered toast

 

on buttered toast under eggs of any description

 

On a grilled cheese sandwich (notice the cheese theme here?)

Basically anything that you'd liek to add salt to is good with vegemite.

Hmm! I'm not a vegan (obviously), but I like the sound of all of those combinations. I can imagine it having an earthy umami-like flavor. Thanks!

Oh I love cheese, but I've been eating less of it lately. Some good ideas here too though. I can imagine avocado and eggs working like butter, providing good fatty/creaminess to balance it. Thanks for the link too! I'm intrigued by the recipes that use vegemite in a marinade. Has anyone tried that?

 

Any more ideas?

You NEED to have butter on your toast/bread in addition to anything else. It lubes it up so you can spread thinly. Thin is the key. Most people I have met here who tried it had it on WAY too thick, like peanut butter! You need to be able to see the bread through the spread (a scraping).

 

I have used it in marinades and it is good - like worcestershire sauce would be though not so piquant. Make sure you dissolve it well.
