Potluck, post your favorite things to bring to a potluck

Reading the Nov/Dec issue of Mothering, there is a wonderful Peggy's kitchen regarding potlucks!

 

Most of the recipes are what the partipants get in their CSA, farmers market etc and make great things to share. I am so excited about the veggie pancakes, lentil burritos etc.

 

So it had me thinking, lets talk about great things you make for a potluck meal either for a lunch, holiday etc.

I like to bring some sort of meatballs to a potluck.  THey are easy to make ahead, and work well either warm or room temp.  I vary the sauce, and have made everything from homemade sauces to just throwing a nice bbq sauce on top. 

 

I'm interested to hear others' ideas, too!

I like to to bring Vegan Chili.  It is really easy can be made in a crockpot the day before and warmed up later and you can add toppings to make it your own.

 

1 onion chopped and sauted in Olive oil

3-4 cloves of garlic sliced and sauted in Olive oil 

2 cans of rotel tomatoes (one with chili's and one onion/garlic)

5-6 cans of mixed beans (we like 2 black,1 navy, 1 pinto, and 1 kidney) drained and rinsed

1 can of corn drained and rinsed

 

saute onions and garlic add tomatoes in juice add to crock pot.  Add beans and corn and let simmer until flavors combine.  It is better the next day.  I serve on the side corn chips, cheese, sour cream, salsa, and avocado slices.  Sometimes I will cook some ground beef or chicken and serve on the side if people want to add it.  That's it!

That sounds good!   I like the idea of vegetarian something, because then everyone can have some.  But I like meat for myself (juvenile diabetic), so your chili with the sides is great!

I have a super easy (probably not very healthy...but tasty!) enchilada recipe that I send with my husband every time he has a work do...haven't met a person yet who doesn't love it. :)

 

So:

 

Boil 3-4 chicken breasts; cool and shred

Mix in 1 can Old El Paso Enchilada sauce & about half a bag of shredded Mexican cheese

(Optional - add a can of beans to the chicken mix before putting into tortillas - or you can make vegetarian by using beans instead of chicken)

Put the filling into flour tortillas and wrap; place next to each other in cake pan (I've also used whole wheat or ancient grain tortillas)

Once your cake pan is full, pour another can of sauce and the rest of the cheese on top.

Bake at 350 for about 25 minutes.

Serve with sour cream, salsa, olives.

Hot Spinach and Artichoke Dip - always a winner!

 

I package frozen chopped spinach

2 cans artichoke hearts chopped

6 ounces cream cheese or sour cream

1/4 cup mayo

1 c parm cheese

1/2 teaspoon red pepper flakes

1/4 teaspoon salt

1/4 teaspoon garlic powder

 

Portions are all approx.  Mix it up, sprinkle with more parmesan and bake until cheese on top is just a bit brown.  Serve with warm pide bread.  Yum!

I host a pot luck at work every other month for the folks at the senior center wink1.gif.  I like to bring baked potato soup for my soup themed one in Jan (I make it vegetarian and serve bacon on the side), corned beef and cabbage to the St. Patrick's one, quinoa and black beans to the anything goes one (vegan), turkey roll ups to the finger food one...............

I love to make a salad, since I find there's often a lot of rich, heavy food at potlucks! One of my faves is:

 

1 head napa cabbage, finely shredded

1 or 2 cucumbers (depending on size), seeded and thinly sliced

5 or 6 green onions

Generous handful chopped cilantro

1/2 cup or so of toasted peanuts

 

Dressed with:

 

Rice wine vinegar

Small amount of sweetener (cane sugar, honey etc)

Sriracha hot sauce

 

Yum!

I usually take deviled eggs, because my kids love them and then I make extra to keep. Or, some kind of pasta salad with vinagrette dressing with lots of fresh veggies--whatever I have on hand.

This is our family's favorite.  My mil used to make this all the time.

 

Lupe's Fried Rice (This is my 81 yo mil's recipe)

3-4 cups white rice
water
1-2 tsp cumin powder
1 tsp black pepper
1-2 tsp garlic powder
1/2 onion, chopped
1/2 green pepper, chopped
1 can tomato sauce
1 lb ground turkey, chicken, pork, etc (whatever meat you want)

Brown ground turkey. Drain and set aside. Brown rice. Stir constantly until light brown on low heat. Add enough water to cover. Let it boil over medium heat. If water absorbs add more. Add spices, onion, and green pepper. Once water is gone and rice is soft add tomato sauce. Add salt, to taste (I don't normally add this). Slowly cook. Put lid on pan, it will cook faster.
