I like to to bring Vegan Chili. It is really easy can be made in a crockpot the day before and warmed up later and you can add toppings to make it your own.

1 onion chopped and sauted in Olive oil
3-4 cloves of garlic sliced and sauted in Olive oilÂ
2 cans of rotel tomatoes (one with chili's and one onion/garlic)
5-6 cans of mixed beans (we like 2 black,1 navy, 1 pinto, and 1 kidney) drained and rinsed
1 can of corn drained and rinsed

saute onions and garlic add tomatoes in juice add to crock pot. Add beans and corn and let simmer until flavors combine. It is better the next day. I serve on the side corn chips, cheese, sour cream, salsa, and avocado slices. Sometimes I will cook some ground beef or chicken and serve on the side if people want to add it. That's it!
