Fermenting with powder culture

At the Wise Traditions conference last year there was a guy who did a session on fermenting without using whey.  He was using some powder.  Does anyone know what this is?   My MIL is asking for my christmas list and I want to put this on there.  :)

You can find some great starter cultures on BodyEcology.com. I have some cultured veggies in my fridge right now that I make from that culture. They also have kefir starter and some other probiotic products. Enjoy!

There are a couple of options out there.  For starter cultures, Body Ecology makes one as does Caldwell Bio Fermentation. I actually like Caldwell's better because it's meant for veggies (and they've put 15+ years of research into it) where the BE culture is more meant for dairy but can be used with veggies.  Ultimately though both work well.

 

I'm thinking it may have been Caldwell's you saw demonstrating at Wise Traditions last year.

 

You can also skip the starter culture and whey and just use more salt.  For example, the recipes in Wild Fermentation are based on salt rather than whey.
