Substitute for dry yellow cake mix

I am trying to make a recipe a little better (less processed junk). I am making an apple cobbler in the crockpot. I have made this before using a box of yellow cake mix the recipe calls for. You just use the dry cake mix nothing added. I wonder if I can use swans down cake flour and just add the dry ingredients for a yellow cake recipe using the swans down. What do you think? Any other ideas? I know they sell organic cake mixes and stuff. Maybe that would be better? I am trying to keep this low cost and I already have the swans down here. Opions please :) Thanks.

I think you'll need to mix in some sort of fat with the dry ingredients (flour, sugar, and leavening).

Yes, pats of organic butter on top of the dry cake mix. So do you think that it would turn out good? I am trying to make sure I am  not missing anything while I avoid all the extras in the boxed stuff.

If it's helpful at all "yellow" cake is made using egg yolks.

Thanks. Sounds good except for the dry milk powder. I try to limit dairy because we only do organic and it is expensive. Also I have not seen organic dry milk at the  stores

I shop at.
