alternative uses for meat from soup bones

I'm out of bone broths so I'm restocking.  I've got beef soup bones on, which are pretty meaty.  Usually I just go ahead and make some beef stew on the day I make beef broth, to use the meat, but dh isn't a big soup fan, and I just made potato soup the other day.  Any ideas on what I can do with the left over meat?

I'd make the beef stew and freeze it. The meat in my soups tends to be pretty tasteless because I simmer it so long but you could try removing most of the meat early on and make goulash or something like that.

Yeah, that's why I wasn't sure what to do with it!  Thanks for the suggestions :)  It's in a bag in the fridge, I might just feed it to the dog.

I pick it off and then use it for BBQ beef in the middle of the winter.
