need help with Nourishing Traditions pumpkin pie recipe

I have this cookbook at home...but we're at the grandparents for Thanksgiving and didn't think to bring it! I think I remember almost all of it, but could someone PM me the recipe? (I assume it wouldn't be ok to just post the recipe in this thread?)

Thank you so much!

PS for anyone who hasn't tried it, it is the best pumpkin pie recipe I or DH as ever tasted and DS can't get enough of it. And it's so easy and naturally dairy free!

INGREDIENTS

3/4 cup almond meal (for crust)
1 oz. can pumpkin puree (I used fresh cooked pumpkin, pureed)
3 eggs (farm fresh is best)
1/2 cup Rapadura Sugar
1 dash Stevia*
1 tbsp. Fresh Grated Ginger
1 tsp. Cinnamon
1/4 tsp. Sea Salt
1/4 tsp. Powdered Cloves
1/4 tsp. Nutmeg
Grated Rind of one Lemon
1 cup Creme Fraiche
2 tbsp. Brandy (optional)

INSTRUCTIONS

Press almond meal in bottom and up sides of pie plate. Set aside.

Cream eggs with Rapadura and stevia*.
Gradually blend in other ingredients. Pour into pie shell and bake at 350 degrees for 35-45 minutes. Serve with vanilla ice cream or whipped cream.

That sounds pretty close! Thanks...I'm surprised by the 3 eggs though, I thought there were only 2. Anybody else?

If the NT one was dairy-free, that probably isn't it, because Creme Fraiche is dairy.

I just borrowed NT from a friend. The recipe in the book is exactly as listed above, expect with 3/4 c. rapadura and no stevia. And it just says "1 recipe flaky pie crust" instead of the almond meal.

I'm just amazed by the fact that it calls for canned pumpkin considering how labor intensive most of the other recipes in the book are. I would have thought they'd just tell you to cook and puree your own stinking pumpkin!

Thanks so much for the replies! I'm off to bake it now. I just left out the crust and the creme fraiche. Happy Thanksgiving!
